Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 2 teaspoons vanilla extract

+ 2 TSP Chai For Traditional Chai Blend (+ a little extra for garnish)

Instructions: 

Preheat the oven: Preheat your oven to 325° (163°C). Grease a 9-inch springform pan.

Make the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of the prepared springform pan to form the crust. Bake the crust in the preheated oven for 10 minutes. Allow it to cool while preparing the filling.

Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar and continue beating until well combined. Add the eggs one at a time, beating well after each addition. Mix in the sour cream, flour, and vanilla extract until the batter is smooth.

Incorporate Chai Spice: Gradually fold in 2 teaspoons of the chai spice mix into the cheesecake batter, ensuring it is evenly distributed.

Bake the Cheesecake: Pour the cheesecake batter over the prepared crust. Tap the pan gently on the counter to remove any air bubbles. Bake in the preheated oven for about 50-60 minutes or until the center is set.

Cool and Refrigerate: Allow the cheesecake to cool in the oven with the door ajar for about an hour. Then, refrigerate it for at least 4 hours or overnight to set.
